I was shocked when I had three friends tell me that they actually tried my last recipe so I decided that I’m going to start posting one of my favorite recipes every week. I really want to share meals that appear to be gourmet but are fairly simple and the whole family can eat with a few modifications for the picky eater. I feel like we are always sacrificing quality for our kids or making them separate meals and that is so much freaking work and I refuse to do it. Well, today I do…….
Last night I made this Shrimp Scampi and it was awesome and easy. I’m aware that not all kids eat shrimp but since you add the shrimp last, they can just have the pasta without it. Crisis averted. I should also add that I used chicken broth instead of white wine and skipped the red pepper. I’m not very good at following directions if you cannot tell:) You could always add red pepper after you make the kids plates. Top with parmesan and you have perfection.
*I should also mention that one of my tricks to amazing pasta is boiling it in a broth instead of water. It absorbs the flavor and makes the meal that much better.
